Salt may be one of the most familiar ingredients in food production, but different salts can behave very differently in a formulation. For food manufacturers, choosing the right salt is less about its name or origin and more about how it performs in the finished product.
Key properties to consider include:
- Particle size — affects adhesion, coverage, and perceived saltiness
- Crystal structure — influences texture, crunch, and how salt interacts with a food surface
- Density — affects volume, dosing, and distribution within a blend
- Purity — can influence flavor, appearance, and processing consistency
- Dissolution rate — matters in brines, sauces, doughs, and other applications where salt must disperse evenly
Together, these characteristics can determine how well a salt clings to a chip, disperses through a seasoning blend, dissolves into a formulation, or performs as a finishing salt.

Table Salt
Highly refined sodium chloride, often iodized
Uniform fine particle size; frequently contains anti-caking additives

Kosher Salt
Named for its traditional role in the kashering process, where large crystals draw blood and moisture from meat
Coarse and flaky; generally uniodized and free of anti-caking chemicals; crunchy texture as a finishing salt

Sea Salt
Produced from evaporated ocean water
May contain trace minerals; available in multiple crystal sizes

Pretzel Salt
Coarser crystals than standard table salt

Flakey Salt (Maldon-style)

Fine Salt
Refined salt produced in a fine particle size
Dissolves and disperses quickly; consistent particle size
Baking, sauces, soups, processed foods, seasoning blends
Micro Fine Salt
Salt milled to an extremely fine particle size
Excellent adhesion and rapid dispersion
Potato chips, popcorn, extruded snacks, dry seasoning blends
Pickling Salt
Fine, highly soluble salt generally formulated without iodine or anti-caking additives
Dissolves cleanly in brines; minimizes cloudiness
